PUMPKIN PANCAKES
Entrees

Ingredients:
  • 2 cups biscuit mix
  • 2 TBS brown sugar
  • 2 tsp. cinnamon
  • 2 eggs
  • 1 can (12 ounces) evaporated milk
  • 1/2 cup cooked, mashed pumpkin pulp
  • 2 TBS vegetable oil
  • 1 tsp. vanilla
In a bowl, combine biscuit mix, brown sugar and cinnamon. In another bowl, combine eggs, milk, pumpkin, oil and vanilla. Stir into dry ingredients and mix well.
Pour batter by 1/2 cupfuls onto a lightly greased hot griddle. Turn when bubbles form on top of pancakes. Cook until second side is golden brown. Serve with butter and maple syrup.
