Vegetables & Side Dishes

  • 1/2 lb. each of ground beef and ground pork (may substitute ground turkey, drizzling 2 tsp. extra virgin olive oil over meat when mixing)
  • 1/4 cup grated onion
  • 1/4 cup chopped fresh parsley
  • 1/4 cup bread crumbs
  • 1 egg, beaten
  • 1 tablespoon pesto*
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon dried Italian herbs
  • 8 oz. grated mozzarella cheese, for later
Preheat oven to 400 degrees.
Gently mix all ingredients except mozzarella cheese together with a fork.
Scoop meatballs onto greased sheet pan and bake for 15 minutes. Remove from oven and set aside.
Grease the bottom of a 9- by 13-inch casserole dish. Cover the bottom with meatballs. Top with cooked pasta. Pour all of sauce over pasta, using a spoon to be sure sauce gets down through pasta to meatballs. Add cheese to top and spread evenly. Top with foil and bake for 15 minutes. Remove foil and bake for another 15 minutes. Let sit out of oven for 10 minutes before serving.
