Vegetables & Side Dishes

Ingredients:
  • 2 cups cold seasoned mashed potatoes
  • 1 small onion, chopped
  • 1?4 cup sour cream
  • 1 cup frozen corn
  • 1 cup shredded sharp cheddar cheese
  • 1?2 cup bacon bits
  • 1 tsp. salt
  • 1?2 tsp. pepper
  • 1?2 stick of margarine, melted
  • 1 sleeve round crackers, crushed
Mix all ingredients except cracker crumbs and butter together and form golf ball-sized portions of the mixture.
Roll balls in melted margarine then crumbs.
Place balls on greased 9- by 13-inch baking dish. Bake at 350 for 20 minutes. Let stand 5 minutes before serving.
