Lemon Blueberry Bars

  • For the crust:
  • 1 1/2 cups graham cracker crumbs
  • 6 TBS butter, melted
  • 1/4 cup granulated sugar
  • Zest of one lemon
  • For the filling:
  • 2 large egg yolks
  • 1 (14-ounce( can sweetened condensed milk
  • 1/2 cup fresh lemon juice
  • 1 tsp. lemon zest
  • 1 cup fresh blueberries, divided
For the crust:
Preheat oven to 350 degrees. Spray an 8-inch square baking dish with cooking spray. Set aside.
In a medium bowl, combine graham cracker crumbs, melted butter, sugar and zest of one lemon. Stir until crumbs are moist. Press into bottom and slightly up the sides of dish. Bake crust about 10 minutes. Remove and cool to room temperature.
For the filling:
In a medium bowl, combine egg yolks and sweetened condensed milk. Stir in lemon juice and 1 tsp. zest. Stir until mixture is smooth and begins to thicken slightly. Gently fold in 3/4 cup blueberries, reserving some for garnish.
Pour the lemon-blueberry filling evenly over the graham crust, then top with remaining blueberries. Bake for 15 minutes or just until set. You can bake for 2-4 minutes longer if you want.
Cool for 10 minutes at room temperature. Then refrigerate until completely set, about 6-8 hours or overnight. Cut into bars to serve.
