Crock Pot Baked Apples

  • 6 cored Gala or Macintosh apples
  • 1/4 cup brown sugar
  • 1/4 cup chopped walnuts or pecans (optional)
  • 2 TBS trans fat free margarine or butter
  • 1 tsp. cinnamon
  • 1/2 cup apple juice or apple cider
  • 2 TBS orange liquor (optional)
With a small pairing knife, core most of the way through the apples, leaving about 1/2 inch of apple at the bottom.
In a large bowl, mix brown sugar, nuts, margarine or butter and cinnamon.
Fill apples with mixture and place them in a slow cooker. Pour the apple juice or cider and liquor into the crock pot around the apples.
Set slow cooker on high heat and cook 2 1/2-3 hours until apples are soft and begin to collapse.
Serve with vanilla ice cream. Can be refrigerated up to three days in an airtight container.
