Gluten free snowballs

  • 2 cups almonds ground finely or almond flour 
  • 1/2 tsp. salt
  • 3/4 cup butter
  • 1 egg
  • 1/2 cup confectioner’s sugar
  • 1 TBS vanilla
  • 1 tsp. almond extract
  • 1/2 cup chopped nuts
Preheat oven to 325 degrees.
Sift almond flour and salt.
In a separate container, cream butter, egg and flour. Blend in vanilla, almond extract and chopped nuts. Add almond flour and salt slowly. Blend well. Make tablespoon-size balls. Press each with your thumb to make cookies instead of balls.  
Bake on wax paper or cookie sheet for 20 minutes. Roll warm cookies in confectioner’s sugar.
