Pumpkin cookies

Ingredients:
  • 1 cup light brown sugar, packed
  • 1 cup margarine or butter
  • 2 eggs
  • 1 1/2 cups pumpkin puree
  • 3/4 cup raisins
  • 1/2 cup chopped pecans
  • 1 cup light corn syrup
  • 3 1/2 cups all-purpose flour
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 tsp. nutmeg
  • 1 tsp. cloves
  • 1 tsp. cinnamon
Cream sugar and butter. Add eggs and pumpkin. Mix well. Stir in raisins, pecans and syrup. Sift together flour, baking soda, salt and spices, folding into the mixture.
Drop by spoonfuls onto ungreased cookie sheets. Bake at 375 degrees for 12 to 15 minutes. Store in an airtight container.
Cookies will be more moist the following day.
