Snickerdoodles

Ingredients:
  • 1/2 cup butter or margarine, softened
  • 1/2 cup shortening
  • 1 1/2 cups plus 2 TBS sugar, divided
  • 2 eggs
  • 2 3/4 cups all-purpose flour
  • 2 tsp. cream of tartar
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • 2 tsp. cinnamon
Heat oven to 400 degrees.
Mix butter, shortening, 1 1/2 cups sugar and eggs thoroughly. Blend in flour, cream of tartar, baking soda and salt. Shape dough by rounded teaspoonfuls into balls.
Mix 2 tablespoons of sugar with cinnamon in a separate bowl. Roll balls into cinnamon and sugar mixture and place about 2 inches apart on ungreased baking sheet.
Bake 8-10 minutes or until set. Cookies will puff up at first, then flatten out. Immediately remove from cookie sheet.
