Blackberry Jam Cake

  • 3 cups sifted all-purpose flour
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • 1 tsp. cinnamon
  • 1 tsp. ground cloves
  • 2/3 cup shortening
  • 1 1/2 cups sugar
  • 3 eggs, well-beaten
  • 1 cup blackberry jam
  • 1 cup buttermilk
Preheat oven to 350 degrees. Grease three cake pans.
Mix and sift flour, baking powder, baking soda, salt and spices.
Cream shortening until soft and smooth. Gradually add sugar, beating until very fluffy. Beat in eggs and jam.
To the creamed mixture, add flour mixture alternately with buttermilk, beating until smooth after each addition.
Pour batter into pans and bake for approximately 30 minutes.
Spread Lemon-Orange Cake Filling between layers. Frost with icing of choice (such as vanilla or buttercream).
