Lemon-Orange Cake Filling

  • 1/2 cup flour
  • 1 cup sugar
  • 1/4 tsp. salt
  • 1/4 cup water
  • 2 TBS grated orange rind
  • 1 TBS grated lemon rind
  • 1 1/4 cups orange juice
  • 1/4 cup lemon juice
  • 4 egg yolks, well beaten
Combine flour, sugar, salt and water in a heavy saucepan. Mix well. Stir in fruit rinds and juices. Cook over medium heat, stirring constantly until the mixture thickens and boils.
In a separate bowl, gradually stir about a quarter of the heated mixture into egg yolks. Add to remaining heated mixture.
Return contents of pan to a boil. Cook 1 to 2 minutes, stirring constantly. Remove from heat and allow to cool completely.
