Pumpkin Cookies with Cream Cheese Icing

  • For the cookies:
  • 2 cups sugar
  • 1 cup shortening or 2 sticks margarine or butter
  • 2 eggs
  • 2 cups pumpkin or pumpkin pie mix
  • 2 tsp. baking powder
  • 2 tsp. baking soda
  • 1 tsp. salt
  • 2 tsp. cinnamon
  • 2 tsp. all-spice
  • 4 cups plain flour
  • 2 tsp. vanilla
  • For the icing:
  • 1 box confectioner’s sugar
  • 1 8 ounce package cream cheese
  • 1 stick butter or margarine, softened
  • 1 tsp. vanilla
For the cookies:
Cream sugar, butter and eggs. Add pumpkin and stir well.
Blend in baking powder, baking soda, salt, cinnamon and all-spice and mix well.
Blend in flour and vanilla. The mixture is usually runny.
Drop by teaspoons on greased cookie sheet. Bake at 375 for 6 to 8 minutes.
For the icing:
Mix together all ingredients. Spread onto cooled cookies.
