Chicken Marsala
Entrees

Ingredients:
  • For the Marsala sauce:
  • 1/3 cup butter
  • 2 TBS minced shallots
  • 2 tsp. minced garlic
  • 4 ounces mushrooms
  • 1/4 cup Marsala cooking wine
  • 1 slice prosciutto, diced
  • 1/4 tsp. black pepper
  • 1 cup chicken broth
  • 2 tsp. cornstarch
  • 2 TBS heavy cream
  • For the chicken:
  • 4 skinless chicken breasts
  • Olive oil
  • 1/4 tsp. salt
  • 1 tsp. black pepper
  • 1/2 tsp. dried oregano
  • 1/2 tsp. parsley
  • 1/4 tsp. marjoram
  • 1/4 tsp. garlic powder
  • 1/4 tsp. onion powder
For the Marsala sauce:
Heat butter over medium heat and add shallots, garlic and mushrooms. Saute for 3 minutes, then add wine. Cook an additional minute then add the rest of the ingredients. Simmer for 5 minutes.
For the chicken:
Rub chicken with oil and seasonings.
Grill chicken at 350 to 400 degrees for 10 minutes or until the internal temperature is 165 degrees.
Plate chicken and pour sauce over chicken.
