Fried Cabbage wtih Polish Sausage

3 TBS bacon grease
1 small head of cabbage, chopped
1 small onion, chopped
1/2 red pepper, chopped (optional)
1 pound Polish sausage, sliced in rounds
1 (15 ounce) can diced tomatoes
1/2 tsp. salt
1/2 tsp. pepper
Drops of hot sauce (optional)
Put bacon grease into a large skillet on medium heat. Add cabbage, onion and red pepper. Cook for about 5 minutes, stirring to prevent sticking.
Add remaining ingredients. Cover and simmer for 20 to 25 minutes.
