Red Velvet Cake

Ingredients:
  • For the cake:
  • 2 cups cooking oil
  • 1 1/2 cup sugar
  • 2 eggs
  • 2 1/2 cups self-rising flour
  • 2 TBS cocoa
  • 1 tsp. salt
  • 1 cup buttermilk
  • 2 tsp. vinegar
  • 1 bottle red coloring
  • 1 tsp. vanilla
  • For the icing:
  • 8 ounces cream cheese
  • 1 box confectioner’s sugar
  • 1 tsp. vanilla
  • 1 stick margarine, softened
  • Black walnuts, for topping
For the cake:
Grease and flour two cake pans. Preheat oven to 350 degrees.
Beat together oil, sugar and eggs. In a separate bowl, mix together flour, cocoa and salt. In another bowl, mix together buttermilk, vinegar, food coloring and vanilla.
Pour 1/3 dry mixture into butter mixture and beat lightly, then do the same with buttermilk mixture. Continue until all ingredients are incorporated. Pour evenly into cake pans. Bake for 30 minutes.

For the icing:
Beat ingredients together until smooth. Spread over cooled cake.
