SWEET POTATO SOUFFLE
Vegetables & Side Dishes

Ingredients:
  • 3 cups mashed sweet potatoes
  • 1 cup sugar
  • 2 eggs
  • 1/2 cup milk
  • 1/2 tsp. salt
  • 2/3 stick margarine, melted, divided
  • 1 tsp. vanilla
  • 1 cup brown sugar
  • 1 cup chopped nuts
  • 1?3 cup flour
  • 1 cup shredded coconut
Preheat oven to 350 degrees.
Mix sweet potatoes, sugar, eggs, milk, salt, 1?3 stick melted margarine and vanilla. Pour into greased baking dish.
Mix 1?3 cup melted margarine, brown sugar, nuts, flour and shredded coconut. Pour over potatoes. Bake for 25 minutes or until top is brown.
