Healthy Banana Bread

  • 1/4 cup softened butter
  • 1 cup sugar
  • 1/2 cup egg whites
  • 1 1/2 cup mashed ripe bananas (about 3)
  • 1/3 cup plain fat-free yogurt
  • 1 tsp. vanilla extract
  • 2 cups flour
  • 3/4 tsp. baking soda
  • 1/2 tsp. salt
  • 1/4 to 1/2 cup mini chocolate chips (optional)
Preheat oven to 350 degrees. Grease one loaf pan.
Mix butter and sugar together until well blended. Beat in egg whites. Add banana, yogurt and vanilla; beat until blended. Add flour, baking soda and salt; beat at low speed until just moist. Fold in mini chocolate chips, if using.
Spoon batter into greased loaf pan. Bake for about an hour or until a toothpick comes out clean. Cool 10 minutes in pan, then remove. Let cool. Freezes well.
