Mango Chili Cupcakes

Ingredients:
  • 6 TBS butter at room temperature
  • 3/4 cup sugar
  • 1 egg at room temperature
  • 1 cup flour
  • 2 tsp. baking powder
  • 1/2 to 1 tsp. chili powder
  • 1/2 tsp. salt
  • 3/4 cup milk at room temperature
  • 1/4 cup mango pulp
  • Topping Ingredients
  • 8 ounces whipped topping
  • 1 cup mango pulp
  • 1/3 cup powdered sugar
  • 12 to 24 dried mango slices
Heat oven to 350 degrees. Line a muffin tin.
In a large bowl, cream the butter and sugar. Add egg, mixing thoroughly. Stir in flour, baking powder, chili powder and salt. Add milk and mango pulp, beating until well combined. Fill each muffin cavity 2?3 full. Bake for about 15 minutes. Remove cupcakes from pan and let cool.

Topping Instructions:
Mix together whipped topping and mango pulp. Add sugar to taste. Top cupcakes. Decorate with slices of dried mango.
