Potato Chips

  • 1 TBS salt
  • 1 TBS sugar
  • bowl of water
  • 4 potatoes
  • Cooking oil, enough to fill fryer or deep pan
  • seasoning salt, to taste
Dissolve sugar and salt in water.
Slice potatoes with a mandolin, vegetable peeler or (thinly) with a knife. (Peeling is optional.) As slices are made, dunk them in the water.
Heat oil in fryer until hot. A fryer will have an automatic setting; oil in a pan on the stove should reach 350 to 400 degrees. Dab potato slices dry with a paper towel. Place a handful at a time in hot oil and cook until they rise to the surface and are lightly browned, about 4 to 5 minutes.
