  • 1 1/2 cups Brazil nuts
  • 1 onion, chopped
  • 2 tsp. ground flax seed or chia seed
  • 2 TBS chopped fresh parsley
  • 1 tsp. salt
  • 1 cup soy milk
  • 1 cup fresh bread crumbs or quick oats
Preheat oven to 350 degrees. Chop Brazil nuts finely or ground them into a meal. Mix all ingredients together and then spoon into patty shape onto a greased oven tray. Bake fir 25 minutes, then turn the patties over and bake another 15 minutes.
Serve hot as a dinner entree, or cold with picnic lunch.
