Lime pickles
Vegetables & Side Dishes

Ingredients:
  • 2 cups lime (white powder used in canning)
  • 2 gallons cold water
  • 7 pints sliced cucumbers
  • 4 pints sugar
  • 2 TBS salt
  • 1/2 gallon vinegar, less 1 cup
  • 2 TBS pickling spices
Mix lime into water. Place cucumbers into mixture and leave for 24 hours, stirring frequently.
The next day, rinse cucumbers in cold water two or three times to get off all the lime. Place in a large cooking pot. Add sugar, salt and vinegar.
Put pickling spices into cheesecloth, tie well and drop into the pot. Let soak overnight.
The next day, boil for 35 minutes, put into jars. Use soon, or seal according to USDA recommendations.
