Vegetables & Side Dishes

  • 2 bags Minute Rice Medley
  • 1 large onion, chopped
  • 2 packages sliced fresh mushrooms
  • 1 family sized container of organic spinach
  • 2 palms full of garlic powder
  • 2 palms full of onion powder
  • salt and pepper to taste
  • pinch of nutmeg
  • 5 TBS olive oil
  • 1 pat of butter
Cook the rice according to the directions on the box.
In a large pan, sauté the chopped onion, mushrooms, a palm full each of garlic and onion powder, salt and pepper and 3 tablespoons olive oil until the vegetables are tender. Add the spinach a little bit at a time until all is worked in.
When half of the spinach is in the pan, add the other palm full of garlic and onion powder. Add in the remaining 2 tablespoons olive oil. the nutmeg and more salt and pepper as needed.
When the rice is done, add it to the vegetables and mix well. Then stir in butter. Serve with beef, chicken, pork or fish.
