  • 2 (8 oz.) packages cream cheese
  • 1/2 cup sugar
  • 1 tsp. vanilla flavoring
  • Pinch of salt
  • Juice of 1 small lemon or 1/2 large lemon
  • 2 eggs
  • Graham cracker crust
Let cream cheese and eggs come to room temperature. Preheat oven to 350 degrees.
Cream the cream cheese, sugar, vanilla, salt and lemon juice until thoroughly combined. Add in eggs one at a time, mixing well after each.
Pour mixture into graham cracker crust, place in center of oven rack and bake for 40 minutes. Let cool and then refrigerate.
Add toppings if desired.
