GRILLED VEGETABLES
Vegetables & Side Dishes

Ingredients:
  • 2 medium yellow squash
  • 2 medium zucchini squash
  • 1â�„2 Vidalia onion
  • 2 green peppers
  • 2 red peppers
  • 3â�„4 cup mushrooms
  • 2 potatoes
  • Cooking spray
  • 2 sticks butter
  • Grill seasoning of choice
  • Lemon pepper seasoning
Wash all vegetables and slice into bite-size pieces. Tear off enough aluminum foil to make a pouch and spray with cooking spray. Place vegetables on foil and add several pats of butter. Sprinkle with grill seasoning and lemon pepper or other seasoning of choice. Fold into pouch and put on grill over medium heat for 20 to 30 minutes. Cook longer for softer vegetables.
