Sweet Potato Casserole
Vegetables & Side Dishes
Contributed by:
  • 3 cups cooked, mashed sweet potatoes
  • 1 cup white sugar
  • 1 stick butter or margarine
  • 1 tsp. vanilla
  • 2 eggs, beaten
  • (For topping:)
  • 1â�„3 cup self-rising flour
  • 1 cup brown sugar
  • 1 cup chopped pecans
  • 1â�„3 cup butter
  • 1â�„3 cup sweet milk
  • 1 cup coconut
Combine potatoes, sugar, butter, vanilla, eggs with mixer. Pour in baking dish. Combine topping ingredients by hand and spread over sweet potato mixture. Bake 325 degrees for 30-35 minutes.
