Peach Delight

  • 11â�„2 cup self-rising flour and an additional 4 TBS self-rising flour
  • 11â�„2 sticks butter
  • 1 cup chopped pecans
  • 4 TBS peach gelatin
  • 1 cup sugar
  • 1 cup water
  • 8 oz. cream cheese
  • 8 oz. whipped cream
  • 11â�„2 cups powered sugar
  • 4 cups fresh peaches, sliced or chopped
Preheat oven to 350 degrees. Mix flour, butter and pecans in a 9� x 13� baking pan. Bake for 20 minutes. Let cool. Mix gelatin, 4 TBS flour, sugar and water. Cook over low heat until thickened. Let cool. Mix cream cheese, whipped cream and powered sugar. Spread over crust. Layer peaches over cream cheese mixture. Pour cooled gelatin mixture over top. Top with whipped topping if desired.
