VICKI’S TOMATO AND ARTICHOKE PIE
Vegetables & Side Dishes

Ingredients:
  • 1 TBS minced garlic
  • 1â�„2 cup mayonnaise
  • 2 TBS lemon juice
  • 2 TBS fresh chopped basil
  • 1â�„2 cup fresh shredded Parmesan cheese
  • 1â�„2 tsp. salt
  • 1â�„2 tsp. pepper
  • hot sauce
  • 4 large tomatoes, sliced
  • 1 8oz can quartered artichoke hearts
  • 1 baked deep dish pie shell
  • butter
  • 11â�„2 cup bread crumbs
Mix together garlic, mayonnaise, lemon juice, basil, Parmesan cheese, salt and pepper to make the sauce.
Layer tomatoes and artichoke hearts into an already baked deep dish pie shell and spread half of the sauce mix on top of tomatoes with a spatula. Repeat a layers of just tomatoes and cover with remaining sauce. Dot top with butter and spread bread crumbs on top. Bake 30 minutes at 350 degrees. After first 15 minutes, cover with foil tent to prevent burning during last 15 minutes.
