Strawberry Fig Preserves

  • 3 cups mashed figs
  • 1 1/2 cup sugar
  • 1 (3 oz.) pack strawberry gelatin
Cook figs and sugar over medium heat for 2 minutes. Reduce to low heat. Stir in gelatin, stirring constantly to reduce sticking, cooking for 15 minutes. Sterilize four 1/2-pint jars and fill with preserves. Add lids and process 5 minutes in boiling water canner (“hot bath�).
