Poppin’ Good Meatloaf
Entrees

Ingredients:
  • cooking spray
  • 5 cups popped popcorn
  • 1 1/4 pounds extra lean ground beef
  • 1 envelop onion soup mix
  • 1/4 cup milk
  • 1 egg
  • 2 TBS chopped parsley
  • 1 clove garlic or 1 tsp. minced garlic
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1/4 cup salsa
  • 1/4 cup Worcestershire sauce
  • 1/2 cup ketchup
  • 1/4 cup brown sugar
Preheat over to 350 degrees. Spray a loaf pan with cooking spray; set aside. Process popcorn in a blender until finely ground; pour into a large bowl. Add ground beef, onion soup mix, milk, egg, parsley, garlic, salt, pepper and salsa. Press meat mixture into pan; Bake for one hour. After 45 minutes, pour off any grease that may be in the pan (there should be very little if extra lean ground beef is used). Mix Worcestershire sauce, ketchup and brown sugar and pour over meatloaf.
