Susanna’s Favorite Birthday Cake

  • 2 cups sifted flour
  • 2 tsp. baking powder
  • 1â�„2 tsp. salt
  • 2 tsp. cinnamon
  • 2 cups brown sugar
  • 1 cup golden raisins
  • 1â�„2 cup oil
  • 4 eggs, beaten
  • 4-6 finely grated carrots
  • 1 8-ounce can crushed pineapple
  • 1â�„2 cup chopped walnuts
  • 1 3-ounce package coconut, optional
  • For the icing
  • 1â�„2 cup butter, softened
  • 1 8-ounce tub cream cheese, softened
  • 1 tsp. vanilla
  • 1 box powdered sugar
Combine all dry ingredients. Mix in oil and eggs. Add each remaining ingredient, mixing well after each addition. Grease three 9-inch cake pans or one 9x13 pan. Bake at 350 degrees for 30-40 minutes or until toothpick comes out clean.

For the icing
Beat butter and cream cheese with electric mixer. Add vanilla. Gradually beat in sugar until smooth and fluffy.
