  • 6 ounce green ginger
  • 11â�„2 gallons water
  • 6 lbs. white sugar
  • 1â�„2 lemon, sliced
  • 11â�„2 tsp. citric acid
Crack the ginger. Heat the water in stainless steel pot, add sugar to water and stir until dissolved. Pour the mixture onto the cracked ginger. Add lemon slices and citric acid. Cover and leave for three days, after which, strain and bottle off.
