Jamaican rice and beans

  • 1 cup dried red kidney beans
  • 2 cups brown rice
  • 1 cup coconut milk
  • 1 bunch fresh thyme, diced
  • 1 stalk green onion, diced
  • 1 small onion, diced
  • 2 garlic cloves
  • 2 tsp. sea salt
  • 1â�„2 red bell pepper, diced
Cook beans as directed on package. Add more water if needed. Add in the rest of the ingredients along with approximately 2 more cups of water for the rice. Cover the pan and cook on medium heat for one hour. Check often to see if it needs more water.
