  • 6 or 7 tomatoes
  • 2â�„3 cup salad oil
  • 1â�„4 cup vinegar
  • pinch thyme
  • 1â�„2 cup chopped parsley
  • 1â�„2 cup chopped chives
  • salt and pepper to taste
Quarter tomatoes. Combine salad oil, vinegar and seasonings. Place tomatoes in a shallow dish and add dressing. Cover and refrigerate overnight. Remove tomatoes from dressing and serve on a bed of lettuce. Spoon a small amount of the dressing over them.
