BAKED SALT HERRING STUFFED WITH GARLIC
1 lb. salt herring (about 5)
2 TBS minced garlic
Soak herring in water in the refrigerator for 12 hours. Remove, change water and soak for another 12 hours.
Remove herring from water. Spoon garlic inside its cavities. Brush oven rack with oil and place herrings on rack. Bake at 350 degrees for 45 minutes.
The herring could be fried instead of baked, according to preference.
