MEAL-IN-A-CUP AVOCADO SMOOTHIE
1â�„2 ripe avocado
1â�„2 cup fat free cottage cheese
1 cup fat free or 1% buttermilk
1 TBS Agave nectar*
About 1â�„2 cup crushed ice
*agave nectar is a wonderful natural sweetener with a very low glycemic index. It can be found in local health food stores.
Place all ingredients into a blender. Blend until completely smooth.
Take my word for this and just try it, even if youâ€™re not fond of cottage cheese or buttermilk. This smoothie doesnâ€™t taste like either; however itâ€™s really delicious and very filling. This is one serving, and it will keep you going for several hours.
For a savory Avocado Soup, omit the agave nectar, and add two teaspoons fresh lime juice. Add enough low-fat milk to make soup pourable and sip-able. Finally, add salt and hot sauce to taste and garnish with freshly chopped cilantro. Serve in a chilled mug.
