  • 1 1/2 lbs. ground turkey
  • 1 can enchilada sauce
  • 1 bag Mexican blend cheese
  • 1 pack burrito size tortillas
  • Handful of shredded lettuce
  • 1 small container of sour cream
Brown meat in pan. Add 2-3 TBS enchilada sauce and a handful of cheese and mix with meat. Heat tortillas in a pan to soften them. Place about 1/3 cup meat mixture across the middle of each tortilla. Mixture should run across tortillas but not to the edges, because edges will be rolled. First fold in the two sides and then roll up the rest. Place enchiladas in a row in a baking dish. Spoon sauce over the enchiladas, then sprinkle one or two handfuls of cheese on top. Bake at 350 degrees for 30 minutes or until it is bubbling and golden brown. When ready to serve, garnish each enchilada with shredded lettuce and a dallop of sour cream.
