1 cup butter-flavored solid shortening
2 sticks butter, at room temperature
3 cups sugar
5 large eggs
3 1/2 cups cake flour
1 tsp. baking powder
1 cup sour cream
1/4 cup evaporated milk
2 tsp. lemon extract
2 tsp. vanilla extract
1 tsp. almond extract
Preheat oven to 325 degrees. Blend shortening and butter until smooth. Gradually add sugar and beat at medium speed. Add eggs one at a time to mixture, blending at slow speed. When all eggs have been added, beat at medium speed.
In a separate bowl, add the flour and baking powder. Stir until both are mixed together. Decrease mixing speed and add flour mixture to liquid mixture, one spoonful at a time. Increase speed to mix ingredients well. Decrease speed and add the sour cream. Blend for a few seconds, then add milk and mix at medium speed. Add flavorings and continue mixing until all ingredients are blended well.
Grease the sides of a pound cake pan with some shortening and coat lightly with cake flour. Pour mixture into the pan and bake on the center oven rack for one hour and 40 minutes. Remove cake from oven and let cool. Remove from pan by placing a plate on top of the pan and flipping both over.
