  • 11â�„2 cups firmly packed dark brown sugar
  • 11â�„2 cups white sugar
  • 2 TBS butter
  • 1â�„8 tsp. salt
  • 11â�„2 cups evaporated milk
  • 2 cups pecan halves
  • 1 tsp. vanilla
  • 1 tsp. vegetable oil
In a large saucepan, combine all ingredients and cook over a medium-high heat, stirring with a wooden spoon. Cook at a medium boil for about 4 minutes (or until candy thermometer registers 260 degrees Fahrenheit or 127 degrees Celsius). A drop of the mixture should form a hard ball when dropped into cold water.
Remove saucepan from heat. Beat the mixture until it cools and becomes creamy, about two minutes.
Form the pralines by dropping a tablespoonful of the pecan mixture onto large pieces of aluminum foil or waxed paper. Let the candies cool thoroughly before storing them in an airtight container.
Makes about 30 candies.
