GRILLED PUMPKIN
Vegetables & Side Dishes

Ingredients:
  • 2 lbs. fresh pumpkin
  • 2 TBS balsamic vinegar
  • 2 TBS olive oil
  • 1 tsp. oregano
  • 1â�„4 tsp. salt
  • dash black pepper
Wash pumpkin and clean out seeds and fibers. Peel pumpkin and cut into 1-inch cubes. Place cubes into a bowl, add all other ingredients and mix. Grill on medium heat, cooking 5-10 minutes on each side. Remove from grill when soft (test by piercing with fork). Serve warm with butter or margarine.
