STUFFED MINI PUMPKINS

Ingredients:
Small Pepo or Jack-Be-Little pumpkins make novelty serving dishes for stuffing. Select fresh pumpkins about about 3 or 4 inches in diameter, one per person. Pre-heat the oven to 250 degrees. Wash the pumpkins. Cut the tops off, and scoop out the insides. Line a cookie sheet with foil and place the pumpkins on the sheet. Bake for 15-20 minutes, until the insides just begin to soften. For use with cold foods, allow to cool.
May be filled with a hot food such as stuffing or cold foods such as pudding or gelatin.
