SWEET POTATO CRUNCH

Ingredients:
  • 3 to 4 large sweet potatoes
  • 2 tsp. nutmeg
  • 1â�„2 cup brown sugar
  • 2 tsp. vanilla flavor
  • 1 stick margarine
  • for topping mixture:
  • 1 stick melted margarine
  • 1â�„2 cup brown sugar
  • 1 cup chopped walnuts
  • 1â�„2 cup coconut
Peel and slice potatoes and place in baking dish. Sprinkle with nutmeg and brown sugar. Add vanilla flavoring and pats of margarine on top. Pour 1�4 cup of water in pan and bake for 45 minutes on 375 degrees. Meanwhile, combine margarine, sugar, walnuts and coconut. After 45 minutes of baking, remove sweet potatoes from oven and add topping mixture. Bake for an additional 15 minutes and serve.
