APPLESAUCE MUFFINS

Ingredients:
  • 6 TBS. margarine
  • 1 egg
  • 1/4 cup sugar
  • 1 1/2 cups flour, sifted
  • 1/4 cup salt
  • 1 1/2 tsp. nutmeg
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • 1 cup applesauce
  • 1 tsp. vanilla
  • 1/4 cup walnuts, chopped
Preheat oven to 375 degrees and spray 12 cupcake pans with non-stick spray. Cream margarine until fluffy. Beat egg and sugar, add to margarine and blend. Sift together dry ingredients and add to margarine mixture alternately with applesauce, mixing well after each addition. Stir in vanilla and nuts. Spoon into cupcake pans and bake 12-20 minutes. Six to 8 packages of sugar substitute may be used instead of sugar.
