COCONUT CREAM
Sauces

Ingredients:
  • 1 fresh coconut OR
  • 1 TBS corn flour
  • 21â�„8 cup skim milk
  • 2 tsp. coconut essence
Scrape the flesh away from the coconut shell. For each scraped coconut, add one cup of water to the scraped mix. Squeeze the mix between your hands and strain the resulting cream into your prepared dish or save for later.
For low-fat coconut cream, mix one tablespoon corn flour with 21�8 cup skim milk and simmer until creamy. Cool, then stir in two teaspoons coconut essence and refrigerate.
