BASIL AND GARLIC SALAD DRESSING/DIP

Ingredients:
1 clove garlic
3/4 cup loosely packed fresh basil or 1 TBS dried basil
1 (12.3 oz.) package firm silken lite tofu
2 TBS extra virgin olive oil
1/3 cup fresh lemon juice
1 tsp. salt
1/2 cup water
In a food processor, chop garlic and basil. Add remaining ingredients and blend until smooth.
To make dip instead of dressing, add 1/4 cup water to ingredients before blending.
