  • 1 cup tofu and 1/2 cup water or 1 cup soaked soybeans and 1 cup water
  • 2 cloves garlic, minced,or 1 tsp. garlic powder
  • 2-4 tsp. soy sauce
  • 1/4 cup wheat gluten or cornstarch
  • 1 1/2 tsp. salt
  • 1 TBS. onion powder
  • 1 tsp. ground sage or Italian seasoning
  • 3-4 cups soft whole grain bread crumbs
  • 2 cups chopped nuts
  • 2 cups onion, finely chopped
Preheat oven to 350 degrees. Blend tofu or soybeans with water, garlic and seasonings in a blender. Combine remaining ingredients in a mixing bowl. Add tofu mixture and mix well. Place mixture in a lightly oiled or nonstick loaf pan and cover with foil. Bake for one hour,then remove foil and bake for 15 minutes.
Cool for five minutes, then remove from pan. Serve with sweet and sour tomato sauce or gravy. The loaf freezes well.
