  • 1â�„4 cup Balsamic vinegar
  • 3â�„4 cup olive oil
  • 2 cloves garlic, minced
  • Cracked pepper to taste
  • Salt to taste
  • 2 teaspoons dijon mustard
  • 1 bunch fresh asparagus
Whisk vinegar and oil together in a bowl. Add remaining ingredients except for the asparagus.
Steam or poach asparagus for 3-5 minutes. While hot, pour vinaigrette over asparagus and refrigerate for several hours. May be served cold or at room temperature.
