RICE AND ARTICHOKE SALAD

Ingredients:
  • 3â�„4 cup rice
  • 11â�„2 cups chicken broth
  • 1â�„2 green bell pepper, finely chopped
  • 2 green onions, chopped
  • 1â�„3 cup sliced green olives
  • 11â�„2 to 2 (8.5 ounces) cans artichoke hearts, quartered
  • 1 cup mayonnaise
  • 1â�„2 teaspoon curry powder
  • black pepper to taste
Cook rice in chicken broth according to package directions and cool. Add green pepper, green onions, olives, and artichokes.
In a separate bowl, mix mayonnaise with curry powder and stir into rice; refrigerate overnight.
As a variation, 1 cup cold shrimp or cubes of white chicken meat may also be added.
