  • 1/2 lb. beef or stew meat
  • Sliced vegetables: zucchini, yellow squash, carrots, onions, mushrooms
  • 1 cup of white rice
  • 6-8 cups of water
  • Salt and pepper
Add rice and 6 cups water to a slow cooker. Combine the rest of the ingredients with the rice and cook on low for 2-4 hours. Congee should be very thick and hearty. If it is too thick, add more water, and if it is too thin, cook longer.
