Vegetables & Side Dishes

  • Spinach
  • 1 cup water
  • 3.5 oz. salt
Wash the spinach and cut into small pieces. Cook with the rice.
Congees similar to the spinach congee can be made using that basic recipe and adding the following ingredients instead of spinach:
• Beets and beet tops for anemia; swiss chard for diabetes;
• Deer kidney (one pair) for low back soreness and weak lower legs;
• 2-3 cups celery or one pork brain for high blood pressure and dizziness;
• 1 cup mung beans, 1/2 cup organic mushrooms, one large piece kombu or other sea vegetable, sea horse or turtle shell for poor digestion, fatigue and general weakness.
