  • 1 TBS rice wine vinegar
  • 7 TBS nuoc mam (fermented fish sauce, available in Asian markets)
  • 2 TBS sugar
  • 1/2 cup cold water
  • juice of one lime
  • 2 TBS freshly chopped cilantro
  • 1/4 cup minced fresh cilantro
  • 2 large cloves garlic, peeled and minched
  • 1 jalapeno peppers, ribs and seeds removed, finely chopped
Mix all ingredients together in a medium-sized bowl, stirring until the sugar is dissolved.
Store in refrigerator until ready to use.
Makes one cup.
