SQUASH CASSEROLE
Vegetables & Side Dishes

Ingredients:
  • 3 medium yellow squash
  • 3 medium zucchini
  • 8 oz. sour cream
  • Small jar chopped pimentos, drained
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • salt
  • pepper
  • dash of onion powder
  • Topping
  • 1 package Pepperidge Farm bread crumbs
  • 2 sticks butter, melted
Preheat oven to 350 degrees. Cube squash and zucchini. Cook, drain and mash. Mix remaining ingredients with the squash and pour into a 9-by-13-inch baking dish. Sprinkle bread crumbs over the top, then drizzle butter evenly over breadcrumbs. Bake uncovered for 35-45 minutes.
